All the 3 courses below gave us a real taste of Mediterranean food at its best. If you are well organised, you can prepare all three dishes and then cook them all at the same time. Cooking time around 30 minutes. We ate all dishes with bread, and wine, followed by fresh fruit.
First course was chick peas, which we soaked overnight and cooked with some fresh vegetables until it became a nice soup. Best in a pressure cooker.
Second course was Sardinian mushrooms roasted in the oven with lots of garlic, chili, parsley, olive oil.
Third course was red peppers cooked with Olive oil, onion, chili until soft and become almost a sauce. Cooked in a deep pan over moderate heat..
