Simple things are always best.

When you open the fridge and its almost bare you have to make do sometimes, but the result was very tasty. If you like the ingredients then you will like the outcome. And this occasion was no exception. This is for Lois Elsdon

I’m one of these persons who does not like fiddly time consuming preparation, so I just chopped up all the vegetables, skinned the chicken thighs, added the olive oil and a whole can of beer all into a pressure cooker and cooked to 30 mins then another 10-15 minutes open to reduce the fluid, just look at the result. I served with jacket potato and salad, accompanied with a nice red.
